LEVEL 2 – FOOD AND SAFETY / FOOD AND HYGIENE

Introduction

 

The purpose of this course is to install confidence in the working environment.
Food safety has become a tool in running a successful business as in today’s world competition is increasing and quality is decreasing.

Aim

  • To raise awareness of food hygiene
  • To promote good practice standards
  • To recognise the need for high standards of hygiene in food premises
  • To understand the ways to achieve high food hygiene standards

Course Content

  • Legislation
  • Food safety hazards
  • Temperature control
  • Refrigeration, chilling and cold handling
  • Cooking, hot handling and reheating
  • Food handling
  • Principles of safe food storage
  • Cleaning
  • Food premises and equipment 

Course Delivery

The training will be delivered over one day (6hrs) using the following methods
(Refreshments will be provided)

  • Verbal communication
  • Hand out
  • Role play
  • Power point/ OHP and Slides

Final Examination

You will be issued with a 30 multiple-choice examination paper

Course Outcomes

  • Play an active part in monitoring food hygiene standards
  • Be involved in training activities, especially on-the-job training
  • Be equipped to effectively supervise food handlers on hygiene issues
  • Be able to carry out hygiene audits
  • Encourage good standards of personal hygiene
  • Be able to assist in hazard analysis programmes
